Pickled Beetroot

Ingredients

1 kg beetroot
2 c sugar
1 litre white wine vinegar
1 c water
3 chillies (optional)
1 star anise
6 (or more) black peppercorns

Directions

Boil beetroot with the skin on until just tender. Drain and cool enough to peel. Peel beetroot and slice. Mix the other ingredients in a saucepan and heat gently, stir as sugar dissolves. Take care that the mixture doesn’t boil. Put beetroot slices in a jar and pour the heated mixture over to completely cover.
